Matt Groening announced at D23 that Apu wasn’t going anywhere which is the correct move. So why not celebrate by doing a whole spin-off series centered around the lovable Kwik-E-Mart store owner, his wife, eight kids, and his extended family? Think of it as almost like a Bob’s Burgers but with Apu’s family running the convenience store. And you never know WHO might drop in (usually it’s Snake).
